BBQ Chicken SALADWITH Gorgonzola Cheese

Ingredients:

  • 1 whole chicken cut into 10 pieces

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 tablespoon olive oil

  • 6 oz Double Barrel BBQ White Truffle BBQ Sauce:

Instructions:

  1. Preheat the Grill or Oven:

    • If using a grill, heat to medium-high (about 375°F).

    • If using an oven, preheat to 400°F.

  2. Season the Chicken:

    • Pat the chicken dry with paper towels.

    • Season with salt, pepper, smoked paprika, and garlic powder.

    • Rub with olive oil to help the seasoning stick.

  3. Cook the Chicken:

    • Grilling Method: Place chicken skin-side down on the grill. Cook for 4–5 minutes, then flip. Continue grilling for another 10–12 minutes until the internal temperature reaches 165°F. Brush the chicken with the White Truffle BBQ Sauce every 3-4 minutes for the last 10 minutes of cooking.

    • Oven Method: Bake for 35–40 minutes until the internal temperature reaches 165°F.

    • In the last 10 minutes of cooking, brush the chicken generously with the White Truffle BBQ Sauce.


Romaine-Red Cabbage Salad with Gorgonzola Cheese

Servings: 4

Ingredients:

  • 1 head romaine lettuce, chopped

  • 1 cup red cabbage, thinly sliced

  • ½ cup crumbled gorgonzola cheese

  • ¼ cup sliced almonds or walnuts (optional, for crunch)

  • ½ cup cherry tomatoes, halved

  • ¼ cup red onion, thinly sliced (optional)

Dressing:

  • 2 tablespoons olive oil

  • 1 tablespoon white balsamic vinegar or lemon juice

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Salad:

    • In a large bowl, combine romaine lettuce, red cabbage, cherry tomatoes, and red onion (if using).

  2. Make the Dressing:

    • In a small bowl, whisk together olive oil, white balsamic vinegar (or lemon juice), Dijon mustard, honey, salt, and pepper.

  3. Toss and Serve:

    • Drizzle the dressing over the salad and toss to coat.

    • Top with gorgonzola cheese and sliced almonds or walnuts for extra texture.

Serving Suggestion:

Plate the BBQ chicken on the sides of a large serving platter, pour the salad down the middle of the platter, top with gorgonzola cheese and scallion for garnish. Enjoy!
