Classic rub Chicken Soft Tacos

Ingredients
For the Ground Chicken:
1 lb ground chicken
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1.5oz Double Barrel BBQ Classic Dry Rub
2 tablespoons tomato paste
¼ cup chicken broth or water
Juice of ½ lime
Toppings:
½ cup roasted corn (fresh, frozen, or canned)
1 avocado, diced
¼ cup fresh cilantro, chopped
2 scallions, diced
1 medium tomato, diced
½ cup caramelized onions (see instructions below)
½ cup sour cream
Optional: fresh lime wedges
For the Soft Tacos:
8 small flour or corn tortillas
Instructions
Prepare the Ground Chicken:
Heat olive oil in a skillet over medium heat. Add the diced onion and cook for 2-3 minutes until translucent.
Add garlic and sauté for another 30 seconds until fragrant.
Add the ground chicken, breaking it apart with a spoon, and cook until browned (5-7 minutes).
Sprinkle in Classic Dry Rub stir to coat the chicken evenly.
Stir in the tomato paste and chicken broth. Let it simmer for 3-4 minutes until the liquid reduces slightly.
Squeeze in lime juice and stir. Remove from heat and set aside.
Roast the Corn:
If using fresh or frozen corn, heat a separate dry skillet over medium-high heat. Add the corn and cook for 3-4 minutes, stirring occasionally, until slightly charred.
Caramelize the Onions:
Heat 1 tablespoon of olive oil in a pan over low heat. Add 1 large thinly sliced onion and a pinch of salt.
Cook slowly, stirring occasionally, for 20-25 minutes until golden and caramelized.
Warm the Tortillas:
Warm the tortillas in a dry skillet over medium heat for 30 seconds per side or wrap them in foil and warm in the oven at 350°F for 5-7 minutes.
Assemble the Tacos:
Spoon the seasoned ground chicken into each tortilla.
Add roasted corn, diced avocado, tomato, caramelized onions, and scallions.
Top with fresh cilantro and a dollop of sour cream.
Serve with lime wedges for an extra burst of flavor.
