Hot Honey Chicken Skillet with Roasted Corn, Scallions, and Avocado

Ingredients

For the Chicken Skillet:

  • 1 lb ground chicken

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 ½ teaspoons smoked paprika

  • 1 teaspoon chili powder

  • ½ teaspoon cumin

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon red pepper flakes (optional for extra heat)

  • 4oz Double Barrel BBQ Hot Honey BBQ Sauce

For the Corn and Garnishes:

  • 1 ½ cups roasted corn (frozen, fresh, or canned)

  • 3 scallions, thinly sliced

  • 1 large avocado, diced

  • Fresh cilantro (optional for garnish)

  • Lime wedges (for serving)

Instructions

  1. Cook the Ground Chicken:

    • Heat olive oil in a large skillet over medium heat.

    • Add diced onion and cook for 2–3 minutes until softened.

    • Stir in minced garlic and cook for 30 seconds until fragrant.

    • Add ground chicken, breaking it up with a spatula. Cook for 5–6 minutes until no longer pink.

  2. Season the Chicken:

    • Pour in the Hot Honey BBQ Sauce and stir until the chicken is evenly coated and simmer for 1–2 minutes.

  3. Add the Roasted Corn:

    • Stir in the roasted corn and cook for another 1–2 minutes until warmed through.

  4. Serve:

    • Remove skillet from heat.

    • Top with scallions, diced avocado, and fresh cilantro if using.

  5. Garnish and Enjoy: Serve with lime wedges on the side for an extra burst of freshness. Serve over rice, cauliflower rice, or with tortillas if desired!
