Hot Honey Chicken Skillet with Roasted Corn, Scallions, and Avocado

Ingredients
For the Chicken Skillet:
1 lb ground chicken
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 ½ teaspoons smoked paprika
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes (optional for extra heat)
4oz Double Barrel BBQ Hot Honey BBQ Sauce
For the Corn and Garnishes:
1 ½ cups roasted corn (frozen, fresh, or canned)
3 scallions, thinly sliced
1 large avocado, diced
Fresh cilantro (optional for garnish)
Lime wedges (for serving)
Instructions
Cook the Ground Chicken:
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook for 2–3 minutes until softened.
Stir in minced garlic and cook for 30 seconds until fragrant.
Add ground chicken, breaking it up with a spatula. Cook for 5–6 minutes until no longer pink.
Season the Chicken:
Pour in the Hot Honey BBQ Sauce and stir until the chicken is evenly coated and simmer for 1–2 minutes.
Add the Roasted Corn:
Stir in the roasted corn and cook for another 1–2 minutes until warmed through.
Serve:
Remove skillet from heat.
Top with scallions, diced avocado, and fresh cilantro if using.
Garnish and Enjoy: Serve with lime wedges on the side for an extra burst of freshness. Serve over rice, cauliflower rice, or with tortillas if desired!
