Ingredients
Dry Ingredients:
3 cups old-fashioned rolled oats
1 cup raw almonds (chopped or whole)
½ cup pecans (chopped)
½ cup pumpkin seeds (pepitas)
½ cup shredded coconut (optional)
½ cup dried cranberries or raisins (optional, for after baking)
Wet Ingredients:
⅓ cup maple syrup or honey
⅓ cup melted coconut oil (or vegetable oil)
1 teaspoon vanilla extract
3oz Double Barrel BBQ Sugar & Spice Dry Rub:
Instructions
Preheat the oven: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.
Mix the dry ingredients:In a large bowl, combine the oats, almonds, pecans, pumpkin seeds, and coconut (if using).
Combine the wet ingredients: In a separate small bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract.
Add the Sugar & Spice Dry Rub into the wet ingredients and stir until well incorporated.
Mix everything together: Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread and bake:Spread the granola mixture evenly across the prepared baking sheet in a thin layer. Bake for 20-25 minutes, stirring halfway through to ensure even toasting.
Cool and add dried fruit (optional):Once the granola is golden brown and crisp, remove it from the oven and let it cool completely on the baking sheet. Stir in the dried cranberries or raisins if desired.
Store:Transfer the cooled granola to an airtight container. It will keep for up to 2 weeks at room temperature.
Serving Suggestions:
Sprinkle over Greek yogurt with fresh berries.
Enjoy with milk or as a topping for smoothie bowls.
Use as a crunchy garnish for desserts!
