Grilled Cheddar Baked Clams with Classic Dry Rub

Ingredients

For the Clams:
12 fresh littleneck clams, scrubbed and rinsed
1/4 cup white wine or clam juice (for steaming)
1/2 cup panko breadcrumbs
1/4 cup sharp cheddar cheese, shredded
12 cubes of cheddar, half the size of the clam
1/4 cup Parmesan cheese, shredded
2 tbsp unsalted butter, melted
2 cloves garlic, minced
1/4 cup fresh parsley, finely chopped
1 tsp lemon zest
Lemon wedges for serving
1oz Double Barrel BBQ Classic Dry Rub:
Instructions
Preheat the Grill:
Preheat your grill to medium-high heat (about 375°F–400°F). Oil the grates lightly to prevent sticking.
Steam the Clams:
Place the clams in a large grill-safe pan (such as a cast-iron skillet) with the white wine or clam juice. Cover tightly with foil and place on the grill.
Cook for 5–7 minutes until the clams open. Discard any clams that do not open.
Remove the clams from their shells and chop finely. Reserve half of the shells for stuffing.
Make the Filling:
In a mixing bowl, combine the chopped clams, panko breadcrumbs, shredded cheddar, Parmesan, melted butter, garlic, parsley, lemon zest, and Classic Dry Rub.
Stuff the Clams:
Place the reserved shells on a baking sheet or grill-safe pan. Spoon the clam mixture into each shell, mounding it slightly.
Place a cube of cheddar on each clam and sprinkle a small pinch of the Classic Dry Rub on top of each clam for an extra smoky kick.
Grill the Stuffed Clams:
Place the stuffed clams directly on the grill or keep them on the grill-safe pan for easier handling.
Close the grill lid and cook for 8–10 minutes, or until the tops are golden and the cheese is bubbling.
Serve:
Carefully remove the clams from the grill and let them cool slightly. Serve with lemon wedges for a burst of brightness.
Optional Add-ons:

Chive Garnish: Sprinkle with fresh chives for added flavor and a pop of color.
