Grilled Cheddar Baked Clams with Classic Dry Rub

Ingredients

For the Clams:

  • 12 fresh littleneck clams, scrubbed and rinsed

  • 1/4 cup white wine or clam juice (for steaming)

  • 1/2 cup panko breadcrumbs

  • 1/4 cup sharp cheddar cheese, shredded

  • 12 cubes of cheddar, half the size of the clam

  • 1/4 cup Parmesan cheese, shredded

  • 2 tbsp unsalted butter, melted

  • 2 cloves garlic, minced

  • 1/4 cup fresh parsley, finely chopped

  • 1 tsp lemon zest

  • Lemon wedges for serving

  • 1oz Double Barrel BBQ Classic Dry Rub:

Instructions

  1. Preheat the Grill:

    • Preheat your grill to medium-high heat (about 375°F–400°F). Oil the grates lightly to prevent sticking.

  2. Steam the Clams:

    • Place the clams in a large grill-safe pan (such as a cast-iron skillet) with the white wine or clam juice. Cover tightly with foil and place on the grill.

    • Cook for 5–7 minutes until the clams open. Discard any clams that do not open.

    • Remove the clams from their shells and chop finely. Reserve half of the shells for stuffing.

  3. Make the Filling:

    • In a mixing bowl, combine the chopped clams, panko breadcrumbs, shredded cheddar, Parmesan, melted butter, garlic, parsley, lemon zest, and Classic Dry Rub.

  4. Stuff the Clams:

    • Place the reserved shells on a baking sheet or grill-safe pan. Spoon the clam mixture into each shell, mounding it slightly.

    • Place a cube of cheddar on each clam and sprinkle a small pinch of the Classic Dry Rub on top of each clam for an extra smoky kick.

  5. Grill the Stuffed Clams:

    • Place the stuffed clams directly on the grill or keep them on the grill-safe pan for easier handling.

    • Close the grill lid and cook for 8–10 minutes, or until the tops are golden and the cheese is bubbling.

  6. Serve:

    • Carefully remove the clams from the grill and let them cool slightly. Serve with lemon wedges for a burst of brightness.

Optional Add-ons:

  • Double Barrel BBQ Hot Honey BBQ Sauce Drizzle: Add a sweet-heat twist by drizzling the clams with hot honey.

  • Chive Garnish: Sprinkle with fresh chives for added flavor and a pop of color.
