Hot Honey Smoked BBQ Ribs

Ingredients


For the Ribs:

  • 2 racks of baby back ribs or St. Louis-style ribs

  • 2 tablespoons olive oil (for coating ribs)

Dry Rub:

  • 6oz Double Barrel BBQ Classic Dry Rub

Hot Honey BBQ Sauce:

  • 8oz Double Barrel BBQ Hot Honey BBQ Sauce


Instructions

1. Prep the Ribs:

  1. Preheat your smoker to 225°F.

  2. Remove the membrane from the underside of the ribs. Use a knife to loosen a corner, grip it with a paper towel, and peel it off.

  3. Coat the ribs with a thin layer of olive oil. Generously rub the Classic Dry Rub all over both sides of the ribs.

2. Smoking the Ribs:

  1. Place the ribs in the smoker with the bone side down. Use a mix of fruitwood (apple, cherry) and hardwood (hickory) for a balanced flavor.

  2. Smoke at 225°F for 3 hours, maintaining a consistent temperature.

3. Wrapping Stage (Optional for Juicy Ribs):

  1. After 3 hours, wrap the ribs tightly in foil or butcher paper. Add a drizzle of honey and a little apple juice or cider vinegar before sealing the wrap.

  2. Place the wrapped ribs back in the smoker and cook for another 2 hours.

4. Final Step:

  1. After 2 hours, unwrap the ribs and brush generously with the Hot Honey BBQ Sauce.

  2. Place the ribs back in the smoker for 30-60 minutes, allowing the sauce to caramelize.

  3. Remove the ribs from the smoker when the internal temperature reaches 195-200°F and the bones start to show slightly.

Serving:

  • Let the ribs rest for 10-15 minutes before slicing.

  • Brush with extra Hot Honey BBQ Sauce and serve with coleslaw, cornbread, or pickled vegetables.
