Lemon Dusted Lobster Roll

Ingredients:

  • 1 lb cooked lobster meat (claw, knuckle, and tail, roughly chopped)

  • 2 tablespoons mayonnaise (adjust to your preference)

  • 1 small celery stalk, finely chopped

  • 1 tablespoon freshly squeezed lemon juice

  • ½ teaspoon lemon zest (optional, for extra citrus flavor)

  • ¼ teaspoon Double Barrel BBQ Lemon Dust Dry Rub

  • 1 pinch of salt, to taste

  • 1 pinch of freshly ground black pepper, to taste

For the rolls:

  • 4 New England-style split-top hot dog rolls (or brioche buns)

  • 2 tablespoons unsalted butter, softened

Instructions:

  1. Prepare the Lobster Mix:

    • In a large bowl, combine the lobster meat, mayonnaise, celery, lemon juice, lemon zest and Lemon Dust Dry Rub. Mix gently until the lobster is evenly coated but not overwhelmed by the mayo.

  2. Toast the Rolls:

    • Heat a pan over medium heat. Spread butter on the outside of each roll and toast them in the pan until golden brown and slightly crisp (about 1-2 minutes per side).

  3. Assemble the Lobster Rolls:

    • Spoon the lobster mixture generously into each toasted roll.

  4. Finish and Serve:

    • Sprinkle the Lemon Dust lightly over the top of the lobster rolls for a zesty kick. Garnish with fresh chives, if desired.
