Roasted Pork Loin with Hot Honey BBQ Sauce, Fresh Cherry Tomato & Avocado Salad

Ingredients:

For the Pork Loin:

  • 2 lb pork loin, trimmed

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 fresh jalapeno, sliced thin

Double Barrel BBQ Hot Honey BBQ Sauce:

  • 8oz

For the Cherry Tomato & Avocado:

  • 1 pint cherry tomatoes, halved

  • 1 large avocado, sliced

  • 2 tablespoons red onion, finely chopped

  • 1 tablespoon fresh basil or cilantro, chopped

  • 1 tablespoon olive oil

  • 1 tablespoon lime juice

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Instructions:

1. Prepare the Pork Loin:

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, mix garlic powder, onion powder, smoked paprika, salt, and black pepper.

  3. Rub the pork loin with olive oil, then coat it evenly with the spice mixture.

  4. Heat a large oven-safe skillet over medium-high heat. Sear the pork loin for 2-3 minutes per side until browned.

2. Roast the Pork:

  1. Transfer the skillet to the preheated oven and roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C), brush the pork loin with the Hot Honey BBQ Sauce for the last 10 minutes of cooking.

  2. Remove the pork loin from the oven, tent it with foil, and let it rest for 10 minutes.

3. Prepare the Cherry Tomato & Avocado Salad:

  1. In a bowl, combine cherry tomatoes, red onion, and fresh herbs.

  2. Drizzle with olive oil and lime juice, then season with salt and pepper. Toss gently to combine.

4. Serve:

  1. Slice the roasted pork loin and drizzle with the hot honey BBQ sauce.

  2. Serve with the fresh cherry tomato and sliced avocado on the side.
