
Ingredients:
4 large boneless, skinless chicken breasts
12 thin asparagus spears (3 per chicken breast)
½ cup Double Barrel BBQ White Truffle BBQ Sauce
4 oz cream cheese, softened
½ cup shredded mozzarella cheese
1 tablespoon fresh chopped parsley (optional)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil
Instructions:
Preheat Oven:Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick spray.
Prepare the Chicken:
Place each chicken breast between two pieces of plastic wrap and gently pound with a meat mallet or rolling pin until it’s about ½-inch thick.
Season both sides of the chicken with garlic powder, onion powder, paprika, salt, and pepper.
Make the Filling:
In a small bowl, combine cream cheese, mozzarella cheese, and 2 tablespoons of White Truffle BBQ Sauce.
Mix until smooth and well combined.
Stuff the Chicken:
Spread 1-2 tablespoons of the cheese mixture on one side of each chicken breast.
Place 3 asparagus spears in the center of the spread and carefully roll up the chicken, securing with toothpicks if needed.
Sear the Chicken:
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Sear each stuffed chicken breast for 2-3 minutes on each side until golden brown.
Bake the Chicken:
Transfer the seared chicken breasts to the prepared baking dish.
Brush the tops of the chicken with the remaining White Truffle BBQ Sauce.
Bake in the oven for 25-30 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
Serve:
Remove the toothpicks before serving.
Garnish with fresh parsley for a pop of color and extra flavor.
