WHITE TRUFFLE BBQ Stuffed Mushrooms with Herbed Cream Cheese

Ingredients:
For the Filling:
8 oz (225g) cream cheese, softened
½ cup shredded mozzarella or Parmesan cheese
2 tablespoons fresh parsley, chopped
1 tablespoon fresh chives, chopped
1 teaspoon fresh thyme leaves
3oz Double Barrel BBQ White Truffle BBQ Sauce
2 garlic cloves, minced
¼ teaspoon salt
¼ teaspoon black pepper
For the Mushrooms:
20-24 large button or baby bella mushrooms (stems removed and finely chopped)
1 tablespoon olive oil
1 teaspoon Double Barrel Classic Dry Rub
½ cup panko or plain bread crumbs
¼ cup finely chopped mushroom stems (from the caps)
2 tablespoons unsalted butter, melted
For Topping:
Fresh Lemon Wedges
Fresh parsley for garnish (optional)
Instructions:
Prepare the Mushrooms:
Preheat the oven to 375°F (190°C).
Gently clean the mushroom caps with a damp paper towel and remove the stems. Chop the stems finely for use in the filling.
Cook the Filling Base:
In a skillet, heat the olive oil over medium heat. Add the chopped mushroom stems, garlic, and ½ teaspoon of the Double Barrel Classic Dry Rub. Sauté for 2-3 minutes until softened and fragrant.
Remove from heat and let cool slightly.
Make the Herbed Cream Cheese Mixture:
In a bowl, combine the cream cheese, mozzarella or Parmesan, parsley, chives, thyme, and the sautéed mushroom mixture. Add salt and pepper to taste and mix until smooth.
Stuff the Mushrooms:
Spoon or pipe the cream cheese mixture into the mushroom caps until slightly mounded.
Top with Bread Crumbs:
Mix the bread crumbs with melted butter and ½ teaspoon of Classic Dry Rub. Sprinkle the crumb mixture generously over the stuffed mushrooms.
Bake:
Arrange the stuffed mushrooms on a greased or parchment-lined baking sheet.
Bake for 20-25 minutes or until the mushrooms are tender, and the bread crumb topping is golden brown.
Add the BBQ Sauce:
Serve with a side of White Truffle BBQ Sauce for dipping!
Serve:
Garnish with fresh parsley if desired and serve warm as an appetizer or side dish.
